sauvignon blanc

bright light green

intensely clean with beautifully balanced tropical and gooseberry like aromas, a slightly herbal undertone helps to lift these into prominence

very good acid balance and length of flavour. strongly varietal in character dominated by overt tropical fruit flavours. a subtle hint of herbal spice helps to link the fragrant aromas to the fresh gooseberry palate

medium term (3-5 years) cellaring will further enhance the wines enjoyment. well suited to shellfish and seafood dishes

two night harvests were done at differing maturity levels to obtain the full spectrum of flavours of this variety. the juice was separated immediately from the skins to retain the delicate aromas and fragrances.
